1 lb (450g) ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely chopped

1 carrot, grated

¼ cup green onions, sliced (plus extra for garnish)

¼ cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

1 head of iceburg or butter lettuce (for wraps)

Sesame seeds, for garnish

Lime wedges, for serving

Prepare the sauce: In a small bowl, combine the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Mix well and set aside.

    Cook the chicken: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and ginger, sautéing for about 1 minute until fragrant.

      Add vegetables: Stir in the ground chicken, breaking it apart with a spatula. Cook for about 5-6 minutes until it starts to brown. Add the chopped red bell pepper and grated carrot, cooking for an additional 3 minutes until the vegetables soften.

        Combine sauce and chicken: Pour the sauce mixture over the cooked chicken and veggies. Stir well to ensure everything is evenly coated. Let it simmer for another 2-3 minutes, allowing the flavors to meld. If needed, season with salt and pepper to taste.
