Sweet Corn and Bacon Fritter Cakes

2 cups sweet corn kernels (fresh or frozen, thawed)

4 strips of bacon, diced

1 cup all-purpose flour

2 large eggs

1/2 cup buttermilk

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon granulated sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup green onions, finely chopped

1/2 cup shredded cheddar cheese

2 tablespoons fresh parsley, chopped (optional)

Vegetable oil for frying

Cook the Bacon: In a large skillet over medium heat, cook the diced bacon until crispy. Remove from the skillet and let it drain on paper towels, reserving a tablespoon of the bacon fat in the skillet.

    Mix the Wet Ingredients: In a large mixing bowl, whisk together the eggs and buttermilk until fully combined.

      Combine the Dry Ingredients: In a separate bowl, mix the flour, baking powder, baking soda, sugar, salt, and black pepper.

        Combine Ingredients: Gradually add the dry mixture to the wet mixture, stirring until just combined. Do not overmix. Then gently fold in the sweet corn, bacon, green onions, cheddar cheese, and parsley (if using).

          Heat the Oil: In the same skillet with reserved bacon fat, heat about 1/4 inch of vegetable oil over medium heat. (You may need to add a bit more oil if necessary.)

            Form the Fritters: Using a 1/4 cup measuring cup, spoon the batter into the hot oil, flattening them slightly to form fritters. Fry in batches, ensuring not to overcrowd the skillet.

              Cook Until Golden: Fry each fritter for about 3-4 minutes on each side or until they turn golden brown and crispy. Use tongs or a slotted spoon to flip them carefully.

                Drain and Serve: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil. Serve warm, perhaps with a dollop of sour cream or a spicy aioli for dipping.
