Ingredients

2 cups fresh corn kernels (about 3-4 ears of corn)

1 cup canned green chiles, drained (mild or hot, based on preference)

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, chilled and cubed

1 cup buttermilk

1 cup shredded cheddar cheese

1/4 cup chopped fresh cilantro (optional, for garnish)

1 egg (for egg wash, optional)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C) and grease a 9x13 inch baking dish.

Prepare the Biscuit Mixture: In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk together until blended.

Cut in the Butter: Add the chilled, cubed butter into the flour mixture. Using a pastry cutter or fork, cut in the butter until the mixture resembles coarse crumbs.

Mix in Wet Ingredients: Pour in the buttermilk and gently stir until just combined. Do not overmix. Then fold in the fresh corn kernels, green chiles, and cheese until evenly distributed.

Bake the Biscuits: Spoon the biscuit mixture into the prepared baking dish, spreading it evenly. If desired, beat the egg and brush it over the top for a golden finish.

Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool & Serve: Allow the biscuit bake to cool for 5 minutes in the pan before serving. Garnish with fresh cilantro, if using, and enjoy warm!
