Sweet Potato & Spinach Bake

2 large sweet potatoes, peeled and diced

4 cups fresh spinach, roughly chopped

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large eggs

1 cup milk (dairy or non-dairy)

1 teaspoon dried oregano

1 teaspoon nutmeg

Salt and pepper to taste

Olive oil for sautéing

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or cooking spray.

    Cook the Sweet Potatoes: In a large pot of boiling salted water, add the diced sweet potatoes. Cook for about 15 minutes or until fork-tender. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Then, add the minced garlic and continue to sauté for another minute.

        Add Spinach: To the skillet, add the chopped spinach and cook until wilted, about 3-4 minutes. Season with salt, pepper, and dried oregano.

          Mix the Egg Mixture: In a large bowl, whisk together the eggs, milk, nutmeg, and a pinch of salt and pepper until well combined.

            Combine Ingredients: In the prepared baking dish, combine the cooked sweet potatoes, sautéed spinach and onion, and crumbled feta cheese. Toss everything gently to mix. Pour the egg mixture evenly over the top, making sure all ingredients are evenly coated.

              Top with Cheese: Sprinkle the shredded mozzarella cheese evenly over the surface of the bake.

                Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the top is golden and the egg mixture is set.

                  Cool and Serve: Remove from the oven and let it cool for a few minutes before slicing. Serve warm as a hearty breakfast, brunch, or light dinner.
