Ingredients

1 cup kidney beans, drained and rinsed

1 cup diced tomatoes (canned or fresh)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

4 large flour tortillas (10 inches)

1 cup sour cream

½ cup warm nacho cheese sauce

½ cup chopped green onions (optional, for garnish)

Instructions

Prepare the Chili Mixture: In a medium saucepan, combine the kidney beans, diced tomatoes, chili powder, cumin, garlic powder, and onion powder. Season with salt and pepper to taste. Heat over medium heat until warmed through, stirring occasionally. Let it simmer for about 10 minutes.

Load the Tortillas: Warm the flour tortillas in a microwave or skillet for about 15 seconds to make them pliable. Place a generous scoop of the chili mixture in the center of each tortilla.

Add Cheese and Sauce: Sprinkle ¼ cup of shredded cheddar cheese over the chili mixture in each tortilla. Drizzle about 2 tablespoons of warm nacho cheese sauce on top of the cheese.

Fold the Burrito: Carefully fold the sides of each tortilla inward, then roll from the bottom to form a secure burrito. Ensure to tuck in the sides as you roll.

Toast (Optional): If you like a crispy exterior, heat a non-stick skillet over medium heat and place the burrito seam-side down. Cook for 2-3 minutes on each side until golden brown.

Serve: Remove the burrito from the skillet, and top with additional warm nacho cheese sauce and sour cream. Garnish with chopped green onions if desired.
