Teriyaki Chicken Rice Bowls

1 lb (450g) boneless, skinless chicken thighs

1 cup cooked jasmine rice

1 cup broccoli florets

1 carrot, julienned

1 bell pepper (red or yellow), sliced

¼ cup soy sauce (or tamari for gluten-free)

2 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tbsp sesame oil

1 clove garlic, minced

1 tsp freshly grated ginger

1 tsp cornstarch (optional, for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Reserve about 2 tablespoons of the marinade for later. Cut chicken into bite-sized pieces and add it to the remaining marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken: In a large skillet or wok over medium-high heat, add a splash of oil. Once hot, add the marinated chicken, including the marinade. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and coats well in the sauce. If you prefer a thicker sauce, mix cornstarch with a tablespoon of water and stir it in to the skillet, cooking for an additional minute until thickened.

      Prepare the Vegetables: In the same skillet, push the chicken to one side and add the broccoli, carrot, and bell pepper. Stir-fry the vegetables for about 3-5 minutes or until slightly tender but still crisp. Season with salt and pepper.

        Assemble the Bowls: In serving bowls, add a generous scoop of jasmine rice as the base. Top with the teriyaki chicken and sautéed vegetables.
