2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (cooked, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1/2 cup crumbled feta cheese (or cotija for a more authentic touch)

Optional toppings: sour cream, hot sauce, jalapeños

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, cumin, chili powder, salt, and pepper until evenly coated.

      Roast: Spread the sweet potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes or until tender and slightly caramelized, tossing halfway through.

        Prepare Other Ingredients: While the sweet potatoes are roasting, prepare the other ingredients. In a medium bowl, combine the black beans, corn, cherry tomatoes, red onion, cilantro, and lime juice. Mix well and season with salt and pepper to taste.

          Assemble the Bowls: Once the sweet potatoes are done roasting, remove them from the oven. In bowl or plate, layer the roasted sweet potatoes, followed by the black bean and corn mixture, and top with diced avocado and crumbled feta cheese.

            Add Optional Toppings: If desired, add a dollop of sour cream, drizzle with hot sauce, or scatter some jalapeños on top for an extra kick.
