Ingredients

2 cups old-fashioned rolled oats

1 cup unsweetened shredded coconut

1 cup nuts (almonds, pecans, or walnuts), roughly chopped

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup dried fruits (cranberries, raisins, or mango), chopped (optional)

1/4 cup dark chocolate chips or chunks (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chopped nuts, ground cinnamon, and salt. Stir well to evenly distribute the ingredients.

Prepare Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until well combined.

Combine Mixtures: Pour the wet mixture over the dry ingredients and stir thoroughly until all the dry ingredients are evenly coated.

Spread the Mixture: Transfer the mixture onto the prepared baking sheet and spread it out into an even layer. Use a spatula to press it down gently, which will help form clusters during baking.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the granola is golden brown. Make sure to stir halfway through baking to prevent burning and ensure even toasting.

Cool and Add Extras: Once done, remove the granola from the oven and allow it to cool completely on the baking sheet. Once cooled, you can mix in the dried fruits and dark chocolate chips, if using.

Store: Once completely cooled, break the granola into clusters and store it in an airtight container at room temperature for up to 2 weeks.

Enjoy your homemade toasty coconut granola clusters as a snack, breakfast topping, or a delicious energy boost!
