1 cup coconut milk (canned or fresh)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey)

1 tsp vanilla extract

1 ripe mango, peeled and diced

1/2 cup pineapple chunks (fresh or canned)

1 tablespoon lime juice

A pinch of salt

Toasted coconut flakes (for garnish)

Fresh mint leaves (for garnish)

Instructions
 

Mix the Base: In a mixing bowl, combine the coconut milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt. Whisk together until well combined.

    Refrigerate: Cover the bowl or transfer the mixture to a mason jar, and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and create a pudding-like consistency.

      Prepare the Fruit: While the chia pudding sets, prepare the mango and pineapple. In a separate bowl, mix the diced mango, pineapple chunks, lime juice, and a pinch of salt. Toss to combine and set aside to marinate for about 15 minutes.
