Ingredients

8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

1 tablespoon truffle oil (adjust based on taste)

Salt and pepper to taste

1 cup panko bread crumbs

½ cup grated Parmesan cheese

Fresh parsley for garnish (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

Make the Cheese Sauce: In a large saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes until it turns a light golden color.

Add Milk: Gradually pour in the whole milk, whisking continuously to prevent lumps. Continue cooking until the mixture thickens, about 5-7 minutes.

Incorporate Cheese: Reduce the heat to low and add the sharp cheddar and Gruyère cheeses gradually, stirring until completely melted. Mix in garlic powder, onion powder, Dijon mustard, truffle oil, salt, and pepper to taste.

Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring until the pasta is well coated. Let the mixture cool for about 10-15 minutes.

Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease with cooking spray.

Form Bites: Using a small ice cream scoop or your hands, form the mac and cheese mixture into small balls (about 1-inch in diameter) and place them on the prepared baking sheet.

Prepare Crunchy Coating: In a bowl, mix together the panko bread crumbs and grated Parmesan cheese. Drench each mac and cheese ball in the mixture, ensuring they are well coated. For extra crunch, you can spray the bites lightly with cooking spray.

Bake: Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and crispy.

Serve: Let them cool for a few minutes before serving. Garnish with fresh parsley if desired and enjoy your gourmet Truffle Mac and Cheese Bites hot!
