2 ripe avocados

1 can (about 5-6 oz) of tuna in water, drained

1/4 cup diced red onion

1/4 cup diced celery

1/4 cup diced bell pepper (any color)

1/4 cup plain Greek yogurt (or mayonnaise, if preferred)

1 tablespoon Dijon mustard

1 tablespoon lemon juice (freshly squeezed)

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Optional: cherry tomatoes, halved (for serving)

Instructions
 

Prepare the Avocados: Cut the avocados in half lengthwise and remove the pits. Scoop out a small portion of the flesh to create a larger cavity for the filling. Set aside the scooped avocado in a mixing bowl.

    Make the Tuna Filling: In the mixing bowl with the scooped avocado, add the drained tuna, diced red onion, celery, and bell pepper.

      Add the Creaminess: Stir in the Greek yogurt (or mayonnaise), Dijon mustard, and lemon juice. Mix until well combined.

        Season: Add salt and pepper to taste. Adjust seasoning based on your preference.

          Fill the Boats: Spoon the tuna avocado mixture back into each avocado half, generously filling them.
