Tuna Stuffed Tomatoes

4 large ripe tomatoes

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise

1/4 cup Greek yogurt

1/2 cup diced celery

1/4 cup diced red onion

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon capers, rinsed and chopped

Salt and pepper to taste

Fresh parsley or basil for garnish

Prepare the Tomatoes: Wash the tomatoes thoroughly. Using a sharp knife, carefully cut off the tops of the tomatoes and scoop out the insides with a spoon, discarding the seeds and excess pulp. Place the emptied tomatoes upside down on a paper towel to drain any excess moisture.

    Make the Tuna Filling: In a mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt, diced celery, diced red onion, Dijon mustard, lemon juice, and chopped capers. Mix well until all ingredients are evenly coated. Add salt and pepper to taste.

      Stuff the Tomatoes: Once your tomatoes are adequately drained, turn them right side up and fill each tomato generously with the tuna mixture using a spoon or piping bag, pressing down gently to ensure they are well-filled.

        Chill: Place the stuffed tomatoes in the refrigerator for at least 30 minutes to allow the flavors to meld.
