Turkey Bacon Breakfast Quesadillas

4 whole wheat tortillas

8 slices of turkey bacon

4 large eggs

1/2 cup shredded cheese (cheddar or a Mexican blend)

1/2 cup bell peppers, diced (any color)

1/4 cup green onions, chopped

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Olive oil or cooking spray

Salsa and sour cream for serving (optional)

Instructions
 

Cook the Turkey Bacon: In a large skillet over medium heat, cook the turkey bacon until crispy. Remove from the skillet and let it cool slightly before chopping it into small pieces.

    Sauté the Vegetables: In the same skillet, add a small amount of olive oil or cooking spray if necessary. Add the diced bell peppers and sauté for about 3-4 minutes until they soften. Season with garlic powder, onion powder, salt, and pepper. Remove from heat and set aside.

      Scramble the Eggs: In a bowl, whisk the eggs. Pour them into the skillet and scramble over medium heat until just set but still slightly runny (they will continue to cook when added to the quesadillas). Stir in the chopped turkey bacon and sautéed vegetables.

        Assemble the Quesadillas: Spread half of the egg mixture evenly over one half of a tortilla. Top with a generous sprinkle of shredded cheese, then fold the tortilla over to cover the filling. Repeat with remaining tortillas.

          Cook the Quesadillas: Wipe out the skillet and return it to medium heat. Lightly grease it with olive oil or cooking spray. Carefully place the folded quesadilla into the skillet and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted.

            Serve: Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve warm with salsa and sour cream if desired.
