Tuscan Mac and Cheese

8 oz elbow macaroni (or any pasta of your choice)

2 cups whole milk

1 cup heavy cream

2 cups shredded mozzarella cheese

1 cup grated Parmigiano-Reggiano cheese

1 cup diced sun-dried tomatoes

1 cup fresh spinach, roughly chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

1/2 cup breadcrumbs (preferably Italian-seasoned)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, boil salted water and cook the macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Sprinkle in the flour, whisking continuously for about 2 minutes to create a roux.

      Add Dairy: Gradually pour in the whole milk and heavy cream while continuously whisking to prevent lumps. Bring the mixture to a simmer and allow it to thicken for about 5 minutes.

        Incorporate Cheeses: Reduce the heat to low and stir in the mozzarella and Parmigiano-Reggiano cheese until melted and smooth. Mix in the dried oregano, red pepper flakes, salt, and pepper. Remove from heat.

          Combine Ingredients: Stir in the cooked pasta, sun-dried tomatoes, and chopped spinach until well combined.

            Assemble and Bake: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. In a small bowl, mix the breadcrumbs with a bit of olive oil, then spread the mixture evenly over the pasta.

              Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and crispy.

                Garnish: Remove from the oven and allow it to cool slightly. Garnish with fresh basil leaves before serving.
