1 cup cherry tomatoes, quartered

1 cup bell peppers (mixed colors), diced

1 avocado, diced

1 small red onion, finely chopped

1/2 cup cilantro, chopped

1 cup shredded cheese (cheddar or a blend)

1/2 cup sour cream or Greek yogurt

1/2 cup salsa (mild or hot, to your preference)

1 lime, juiced

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

Tortilla chips or fresh veggies for serving

Prep the Black Beans: In a large mixing bowl, add the rinsed and drained black beans. Use a fork to mash them lightly, leaving some whole for texture.

    Combine the Veggies: Add the corn, quartered cherry tomatoes, diced bell peppers, chopped red onion, and cilantro to the bowl. Toss everything together gently.
