4 cups fresh corn kernels (about 6 ears or use frozen)

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup black beans, drained and rinsed

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

Optional: Crumbled tortilla chips for garnish

Prepare the Corn: If using fresh corn, shuck the corn and remove the kernels from the cob. You can cook the corn briefly in boiling water for 3-4 minutes if you'd prefer it cooked, then drain and let it cool. Otherwise, simply use fresh or thawed frozen corn.

    Chop the Veggies: Dice the red and yellow bell peppers, finely chop the red onion, and halve the cherry tomatoes. Place them in a large mixing bowl.
