1 cup quinoa, rinsed

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cup bell peppers (mix of red, yellow, and green), diced

1 cup cucumber, diced

1 cup shredded carrots

1 avocado, diced

1 cup canned chickpeas, drained and rinsed

¼ cup red onion, finely chopped

¼ cup fresh parsley, chopped

¼ cup feta cheese, crumbled (optional)

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Optional toppings: pumpkin seeds, sesame seeds, or tahini sauce

Instructions
 

Cook Quinoa: In a medium saucepan, combine rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

    Prepare Veggies: While the quinoa is cooking, wash and chop the cherry tomatoes, bell peppers, cucumber, shredded carrots, and avocado.

      Mix Dressing: In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper to create a dressing.

        Combine Ingredients: In a large bowl, combine the cooked quinoa, cherry tomatoes, bell peppers, cucumber, shredded carrots, avocado, chickpeas, red onion, and parsley.

          Add Dressing: Pour the dressing over the veggie mixture and toss gently to combine. Be careful not to mash the avocado.

            Serve: Divide the colorful crunch veggie bowl into serving containers. Top with crumbled feta cheese (if using) and sprinkle with pumpkin seeds, sesame seeds, or drizzle with tahini sauce, as desired.

              Enjoy: You can serve it immediately, or cover and refrigerate it for up to 3 days for a refreshing meal prep option!
