4 cups whole milk

1 cup granulated sugar

1 vanilla bean (split and seeds scraped)

Instructions
 

Rinse the Rice: Rinse the Arborio rice under cold water in a fine mesh sieve until the water runs clear. This helps to remove excess starch and prevents the pudding from becoming overly sticky.

    Combine Ingredients: In a large saucepan, combine the rinsed rice, whole milk, heavy cream, granulated sugar, salt, the seeds from the vanilla bean, and the split vanilla pod. If you'd like, add the lemon zest and ground cinnamon for an added depth of flavor.

      Cook the Mixture: Place the saucepan over medium heat, stirring occasionally, until the mixture begins to simmer. Once simmering, reduce the heat to low.
