1 medium butternut squash, peeled and diced into 1-inch cubes

2 medium apples (such as Granny Smith or Honeycrisp), cored and diced

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon ground cinnamon

¼ teaspoon nutmeg

Salt and pepper to taste

1 cup vegetable broth

1 tablespoon maple syrup (optional, for added sweetness)

¼ cup chopped walnuts or pecans (optional, for garnish)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, toss the diced butternut squash and apples with olive oil, fresh thyme, ground cinnamon, nutmeg, salt, and pepper until evenly coated.

      Sauté the Aromatics: In a large oven-safe skillet or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add minced garlic and sauté for another minute until fragrant.
