Watermelon Fizz Mocktail Sliders

For the Watermelon Fizz:

4 cups watermelon, cubed and seedless

1 cup sparkling water or club soda

2 tablespoons fresh lime juice

1 tablespoon agave syrup or honey (optional)

Mint leaves for garnish

Lime wedges for garnish

For the Sliders:

1 medium cucumber, sliced into rounds

1 cup feta cheese, crumbled

1 cup cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper to taste

Mini brioche slider buns or pita bread

Microgreens or arugula for topping

Instructions
 

Prepare the Watermelon Fizz:

    - In a blender, combine the cubed watermelon and blend until smooth.

      - Strain the watermelon puree through a fine-mesh sieve into a large pitcher to remove the pulp, if desired.

        - Stir in the sparkling water, fresh lime juice, and agave syrup (if using). Mix until well combined, and refrigerate the fizz until ready to serve.

          Make the Sliders:

            - In a mixing bowl, combine the sliced cucumber, crumbled feta cheese, halved cherry tomatoes, olive oil, salt, and pepper. Toss gently to combine all ingredients evenly.

              - Take the mini brioche slider buns or pita bread and cut them in half if they're not pre-sliced.

                - On the bottom half of each bun, layer a few cucumber rounds, followed by a generous scoop of the feta-tomato mixture, and finish with a handful of microgreens or arugula. Close the sliders with the top half of the bun.
