Zesty Corn and Avocado Salsa

2 cups fresh corn kernels (about 3-4 ears of corn or 1 can of corn, drained)

1 ripe avocado, diced

1 medium red onion, finely chopped

1 red bell pepper, diced

1 jalapeño pepper, finely chopped (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Prepare the Corn: If using fresh corn, remove the kernels from the cob using a sharp knife and place them in a large mixing bowl. If using canned corn, simply drain and rinse it before adding it to the bowl.

    Chop the Veggies: Finely chop the red onion, red bell pepper, and jalapeño pepper. Dice the avocado carefully and add all the vegetables to the bowl with the corn.

      Add Cilantro and Seasoning: Chop the fresh cilantro and add it to the bowl. Sprinkle in the ground cumin and smoked paprika.

        Squeeze the Limes: Cut the limes in half and squeeze the juice over the mixture in the bowl, ensuring to catch any seeds that might fall in.
