Ingredients
  

1 cup orzo pasta

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/4 cup fresh dill, chopped

1/4 cup feta cheese, crumbled

1/4 cup extra-virgin olive oil

Juice and zest of 1 large lemon

1 tsp honey or maple syrup

Salt and pepper to taste

Cook the Orzo: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the orzo and cook according to package instructions until al dente, typically about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the orzo is cooking, chop the cherry tomatoes, cucumber, and red onion. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and fresh dill.

      Make the Dressing: In a small bowl, whisk together the extra-virgin olive oil, lemon juice, lemon zest, and honey (or maple syrup). Season with salt and pepper to taste.

        Combine the Salad: Once the orzo is cool, add it to the bowl with the vegetables. Pour the dressing over the salad and gently toss to combine, making sure everything is well-coated.
