Zesty Shrimp Tacos with Avocado Crema

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

For the Avocado Crema:

1 ripe avocado

½ cup sour cream (or Greek yogurt for a healthier option)

1 tablespoon lime juice

1 clove garlic, minced

Salt to taste

For Assembly:

8 small corn or flour tortillas

1 cup red cabbage, shredded

1 small red onion, thinly sliced

1 cup fresh cilantro, chopped

Lime wedges for serving

Marinate the Shrimp: In a medium bowl, combine the shrimp, olive oil, chili powder, cumin, garlic powder, paprika, salt, pepper, and lime juice. Toss until the shrimp are well coated. Let marinate for at least 15 minutes, or up to 30 minutes in the fridge.

    Make the Avocado Crema: In a blender or food processor, combine the avocado, sour cream, lime juice, minced garlic, and salt. Blend until smooth and creamy. Adjust salt to taste. Set aside.

      Cook the Shrimp: Preheat a large skillet over medium-high heat. Once hot, add the marinated shrimp, cooking for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat.

        Warm the Tortillas: In the same skillet or a separate pan, warm the tortillas for about 30 seconds on each side until pliable.

          Assemble the Tacos: On each tortilla, layer a generous amount of shredded cabbage, a few slices of red onion, and a portion of the cooked shrimp. Drizzle with avocado crema and sprinkle fresh cilantro on top.

            Serve: Serve tacos immediately with lime wedges on the side for an extra zesty kick!
