Ingredients

1 large French baguette, sliced into 1/2-inch thick slices

1 cup cherry tomatoes, diced

1 cup cucumber, finely chopped

1/4 cup red onion, finely diced

1/4 cup fresh basil, chopped

2 tablespoons balsamic vinegar

3 tablespoons olive oil

1 clove garlic, minced

Salt and pepper, to taste

Optional: Grated Parmesan cheese for topping

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Bread: Arrange the baguette slices on a baking sheet. Brush one side of each slice with olive oil. Bake in the preheated oven for about 5-7 minutes, or until they are golden and crispy.

Make the Topping: In a mixing bowl, combine the diced cherry tomatoes, chopped cucumber, red onion, and basil. Add the minced garlic, balsamic vinegar, and remaining olive oil. Season with salt and pepper to taste. Toss everything gently to combine well.

Assemble the Bruschetta: Once the baguette slices are out of the oven and slightly cooled, spoon the tomato-cucumber mixture generously onto the toasted side of each slice.

Serve: If desired, sprinkle grated Parmesan cheese over the bruschetta before serving. Garnish with extra basil leaves for presentation.

Enjoy: Serve immediately as a zesty appetizer or snack, and enjoy the fresh flavors!
