2 large zucchinis, grated

1 cup all-purpose flour

½ cup grated Parmesan cheese

3 large eggs

½ cup whole milk

1 teaspoon baking powder

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh basil, chopped (or 1 teaspoon dried basil)

2 tablespoons fresh parsley, chopped

Olive oil, for greasing the baking dish

Optional: ¼ teaspoon red pepper flakes for a spicy kick

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil.

      Make the Batter: In another bowl, whisk together the eggs and milk until well blended. Slowly add the flour, baking powder, black pepper, and optional red pepper flakes, stirring until the mixture is smooth and free of lumps.
